Asian Crab Spring Roll
with mango and garlic chilli dipping sauce

Yield: About 4 servings
Ingredients:
½ cup shredded Napa cabbage
½ cup julienned bok choy
½ cup julienned carrots
1 tsp. minced ginger
1 tsp. minced garlic
2 tbs. green onions, diced
4 oz. cooked crab meat (or shrimp)
¼ tsp. sesame oil
4 rice paper wrappers
20 mint leaves
Directions:
In mixing bowl combine the cabbage, bok choy, carrots, ginger, garlic, green onions, crab meat and sesame oil. Soak rice paper in bowl of water, just until softened. Lay out rice paper on a cutting board; place 2 mint leaves in the center of the paper. Place 1/4 cup of filling on top of the mint leaves. Turn in sides and roll up like an egg roll. Cut each spring on the diagonal in half. Serve with 1 tablespoon of each dipping sauce. (See recipe below).

MANGO DIPPING SAUCE
Yield: 1 Cup
Serving Size: 1 Tablespoon
Ingredients:
1 cup chopped mango
¼ cup rice wine vinegar
1 tbs. garlic chili dipping sauce
2 tsp. chopped cilantro
3 tbs. apple juice
Directions:
Place the mango, vinegar, chili sauce, and apple juice in a blender and puree.
Pour into a bowl and stir in the cilantro.
