Earthy Vegetable Noodle Soup

4 Servings, 41 calories per half cup
Ingredients
2 tbs onions, chopped
3 & ½ tbsp carrots, peeled and sliced
2 tbs celery, diced
2 tbs parsnips, peeled and diced
3&1/2 tbs rutabaga, peeled and diced
2 tsp turnips, peeled and diced
3 tbs zucchini, sliced
½ tsp chopped garlic
¼ tsp canola oil
2 cups vegetable stock
1 tsp parsley, chopped
Pinch sea salt
Pepper to taste
¼ cup plain pasta, cooked
Instructions
1. Put oil in a large, heated pot. Add all vegetables and garlic and sauté for 10 minutes.
2. Add stock and bring to a boil. Reduce heat and simmer 45 minutes or until vegetables are soft.
3. Add pasta and parsley; season with salt and pepper and serve.
