Grilled Tofu Poke

8 oz Tofu Firm, small dice
1 tbsp Lemon juice
1 tsp Sriracha sauce
2 tbsp Green onion, minced
2 each Avocado, sliced or diced
2 tbsp Rice wine vinegar
4 each Rice paper, toasted
2 cups lettuce
.5 cup Ponzu vinaigrette
Preparation
Mix avocado and vinegar with salt and pepper, reserve
Grill and combine tofu with lemon juice, sriracha sauce, green onion, and mix.
Toss lettuce with vinaigrette.
Arrange lettuce on plate. Cover with layer of avocado mixture. Top with 2 oz. of tofu mixture.
Serve with broken pieces of rice cracker, garnish with extra vinaigrette.
