Millet Tamale Pie

Ingredients
1 cup millet
2 tbs. vegetable oil
1 medium onion, diced
2 cloves garlic, crushed
1 10 oz. bag frozen corn
1 14.5 oz. can tomato sauce
2 ½ cups water
1 tsp. chili powder
2 cups grated Monterey Jack cheese

Preparation
1 . Pre-heat oven to 350˚F.
2. In large skillet, toast the millet over low heat, stirring 3-4 min. Remove millet from pan.
3. Heat oil in skillet on medium heat. Add onion and garlic. Saute until onions start to brown. Add corn, millet, tomato sauce, chili powder and water to skillet.
4. Simmer over medium heat 15 minutes, stirring occasionally.
5. Pour into baking dish and cover with foil. Bake in oven until all water is absorbed (approx 30 minutes).
6. Remove foil, add grated cheese and bake until cheese is melted, Remove from oven and serve immediately.
