Plum Jam
Ingredients
3 cups small plums, pitted and cut into ½-inch wedges
1 ½-2 cups sugar (depending on how sweet you like it)
½ lemon, seeded
Preparation
In a large, non-reactive saucepan, toss the plums with the sugar and stir occasionally (no heat) until sugar dissolves, about one hour. Add lemon juice and bring mixture to a boil. Cook, stirring until syrup is formed , about 20 minutes. Place the jam into sterilized jars. (4 8-oz jars). Follow canning directions for canning procedures.
