Salad with Figs, Blueberries, Cranberries, Walnuts with Maytag Blue Cheese & Raspberry and Orange Vinaigrette

This is a wonderfully delicious salad that is perfect for any occasion. It is fast and very easy and you’ll get standing raves when this salad is served.
Serves 6
Ingredients:
12 cups spring mix24 fresh figs, quartered
1 tbs. walnut oil
2 onions, julienned
1 cup blueberries washed
1/2 cup dried cranberries
1 cup walnut halves
Raspberry and Orange Vinaigrette, recipe to follow
salt and fresh ground black pepper to taste
4 tbs. blue cheese crumbled
Preparation
In a bowl toss the lettuces together with the vinaigrette. On four salad plates, center four cups of lettuce mix. Surround the plates with the figs and berries and drizzle some more of the vinaigrette equally over each of the plates. Sprinkle the crumbled cheese and walnuts over the top and serve chilled. Enjoy!!!
For the vinaigrette:
Ingredients:
1 clove roasted garlic
1 roasted shallot
1 ounce Grand Mariner
2 tbs. orange rind
¼ cup citrus infused rice wine vinegar
¼ cup raspberries
¼ cup olive oil
½ tsp. truffle oil
Preparation
Place everything in a blender and blend until smooth. Season to taste. Place in a sealable container and refrigerate until needed.
