Shaved Asparagus Salad

Serves 4 as a side dish
Ingredients
1 bunch asparagus
Shaved Parmesan to your liking
Small handful of your favorite kind of nut — I’ve used pine nuts and walnuts in this dish on separate occasions.
1/2 lemon, juiced
(1-2 Tbs)
olive oil
Salt and Pepper to taste
Method
Using a vegetable peeler, preferably a y-shaped one, hold down the end of the asparagus stalk and peel off the first layer. Repeat until you can’t take any more slices off the stalk. Meanwhile, toast some pine nuts (or your favorite nut) until golden, but keep an eye on these since they burn easily. Drizzle the asparagus with the lemon juice and olive oil, add salt and pepper to taste and toss to combine. Shave or grate Parmesan cheese into the bowl and add the nuts. Gently toss and serve.
