Cranberry

While many of us only associate cranberries with the holidays, cranberries are nutritional powerhouses that can be savored year-round since they're available fresh, frozen, and canned. And, considering their health benefits, they are a wonderful addition to your antioxidant-rich fruit repertoire. Says Wendy Bazilian, DrPh, RD, nutrition specialist at the Golden Door Resort, "cranberries are loaded with antioxidants and can help decrease cholesterol and fight infections." In addition to their known benefits for helping women with chronic Urinary Tract Infections, Bazilian also notes that recent research shows cranberries may help improve dental health, digestive health, reduce heart disease risk factors and certain cancers, and may provide anti-aging benefits. So, boost your health and increase your immunity with this Cranberry Chutney recipe from the Cliff House Resort & Spa.

Cranberry Chutney - yields 2 Cups

Serve as a side dish, or as a sauce for beef or pork. From the kitchen of the Cliff House Resort & Spa

Ingredients

1 cup cranberries

1 Cortland apple, peeled and sliced

4 halves dried apricot

1/4 cup raisins

1/4 cup sugar

1 tbs. honey

1 tbs. water

1 tbs. cider vinegar

1-1/2 tsp. minced fresh ginger

1 tbs. chopped walnuts

Preparation

In a medium-sized, non-reactive saucepan, simmer all ingredients together until syrupy (about 20 minutes). Cool and serve, or refrigerate for future use.
