Thai Fresh Fruit Salad

Ingredients
20g rose apple, diced
5g grape, halved lengthwise
10g green mango, julienne
15g guava, diced
5g carrot, julienne
20g red apple, diced with skin on
15g green apple, diced with skin on
10g string bean, cut one-inched long and crushed
5g cherry tomato, quartered
1½ t lemon juice
1½ t soy sauce
1 t honey
½ t garlic, finely chopped
2 g red and green chilli, finely chopped
1 t freshly squeezed orange juice
3 ea green lettuce leaves
5 g blanched roasted almond, ground
Preparation
To make salad dressing, mix together lemon juice, soy sauce, honey, garlic, chilli and orange juice in a bowl. Add rose apple, grape, guava, red apple, green apple, string bean and cherry tomato in the dressing bowl. Mix well. Add green mango and carrot in the bowl. Mix well. Pour salad mixture over lettuce leaves on a plate. Sprinkle with ground almond.
