Wild Rice & Cranberries Stuffed Chicken Breast

Servings: 4

Ingredients:

4 chicken breasts
1 cup wild rice, cooked
¼ cup dried cranberries
3 tbs. chopped sage
1/8 cup slivered almonds

Preparation:

Preheat oven to 350˚F. Butterfly, thinly cut chicken breast in half, to create a pocket. A butcher can do this for you if needed. In a mixing bowl, add all the ingredients, except chicken and mix together. Stuff each chicken breast equally with filling. Spray a sheet pan with non-stick cooking spray, place chicken on sheet and bake for 25 minutes or until chicken is fully cooked.
