Zesty Kumquat Quinoa Salad

Ingredients
1 cup quinoa, uncooked
1 cup vegetable broth
¼ cup water
1 cup arugula
1 cup kumquats, chopped and deseeded (leave the peel on)
¼ cup fresh lemon juice
2 tsp. olive oil
¼ tsp. cracked pepper
Preparation
In a medium sized pan, heat the vegetable broth and water to a boil. Reduce to a simmer and add the quinoa. Cook covered, stirring occasionally for 15 minutes. Transfer cooked quinoa to a large bowl and add in remaining ingredients. Serve warm or cold.
